Simple 10 Minute (Healthy) Dinner

Let me just start by saying that I DO NOT like cooking. I LOVE eating healthy but I can’t stand being in the kitchen no more than I have to. I decided to make a few posts of the things that I purchase to cut my “cooking” time by A LOT!! Hope you enjoy it.

Last Nights Dinner:

Chicken Patty with a Cruciferous Spicy Peanut salad

The Ingredients:

  1. Organic Black Beans (drained)
  2. Roasted Chicken Patties
  3. Asian Style Spicy Peanut Vinaigrette
  4. Organic Bell Peppers
  5. Organic Avocado
  6. Roasted and Salted Pumpkin seeds
  7. Cruciferous Crunch Collection
  8. Organic Hummus Dip

*Everything was purchased at Trader Joe’s

How To:

  1. I lightly fried the patties with Olive Oil on a pan for about 4 minutes (2 minutes on each side)
  2. I chopped up the bell peppers and avocado
  3. Combined all the ingredients in a bowl except for the hummus, patties, vinaigrette, and pumpkin seeds
  4. I added the Peanut Vinaigrette to taste and sprinkled the pumpkin seeds to each individul serving of salad
  5. Added a layered of Hummus on the plate to place the patty on top
  6. Added salad on plate

And Voila!! Dinner was served in 10 minutes or less.

*I substituted the hummus for ketchup with theirs, cause ketchup is LIFE for these two.

I hope this gave you a quick/easy and somewhat healthy dinner idea, I know that it’s hard to come up with things to make sometimes. I have a few other dinner ideas on my Instagram too.

  1. i wish, i could keep food to that simple, but i have super picky hubby and toddler, that they want everything mostly fresh or not what i made that day!
    hubby gives me the “fushila” face if i use can items or packaged. if its not cooked from that day, or if its not remotely looking like mexican food, he gets squimish about eating it.. so sometimes i end up eating some food by myself.. and he really doesnt like leftovers.
    but i have to tell you, he’s eating better and healthier now than when he was living at his sister’s. she likes to cook occasionally even though she cooks,well. so they mostly ate out, or carnitas cooked in lard or a whole bottle of oil!
    but because I like cooking eloborate meals as well as mexican, i end up eating my own food for the next few days. While he just wants eggs and beans!
    Argh, yeah A chef would throw the towel on this guy!
    But i’ve been working on him and my toddler to try different foods or else! you know 😉 if mama aint happy, no one is happy!! 😉

    1. You let him getaway with too much 🤣 If he wants eggs with beans then eggs and beans it is, EVERYDAY. Funny thing, he use to eat out A LOT… did he really think that ALL that food was made freshly EVERYDAY?? Sometimes these guys crack me up 😂 Actually the only bad thing about canned beans is the sodium, but nowadays you can find ones with no salt and the nutritional content is the same. I love learning about health. Also just as a tip, frozen vegetables, according to studies I’ve read, are full of way more nutritional content than most vegetables you’ll find in stores. I think educating yourself about what’s truly healthy and reading labels is very important if you have a family. I can watch YouTube videos and learn how to make these elaborate meals but honest truth is, that I rather not, I don’t want to spend hours in the kitchen just to give my family something flavorful but mostly likely bad for their health. A lot of Latin American food is full of lard and salt and if you change the recipe a bit to make it healthier, what’s the point then?? I am learning to make a few “bad elaborate dishes” though, for occasional pigging out 🐷days or just to prove to the hubby that I can do it, IF I wanted to 😂Actually to me it’s harder to come up with meals that they will ACTUALLY eat than it is to just look up a recipe of an unhealthy meal and make it. So I guess, I spend 10 minutes IN the kitchen, BUT way more than that brainstorming and reading labels etc.. mommy life 😩

  2. thats just it, even if i did just make eggs and beans, he would still complain! Good Grief!!😩
    So, i just make food anyway i want it….fancy or not. and let him bicker like an old man or baby that hasnt been fed Wawawa😂, then i ask when he’s done eating. you liked it huh, and he says yeah it was really good! hahu! yup, his brothers are worse. But at least once he’s fed he’s happy baby!😉.”ay mis hijos , mis hijos!!!😅 sometimes i think he wants me to be like mommy for him too!

  3. I hear you sister! Sometimes you want healthy but fast with maximum flavour. Seems to me you smashed it! About to get up and finish a lettuce salad while I fry some salt and pepper calamari from my freezer. Cheers,H
